When complete, Bayside Geelong will offer 110 guest rooms including a mix of 1 and 2 bedroom self-contained and studio apartments, Superior rooms, and an industry-leading number of accessible rooms.
The hotel will also include 2 restaurants and bars, multiple conference and event spaces, an indoor pool, sauna, and fitness centre.
As we continue to grow, we seek a dynamic and experienced Executive Chef to join our team and drive our catering offer.
The Role: An exciting pre-opening opportunity exists for an experienced Executive Chef to join our team.
Working closely with the General Manager, you will develop menus and recipes for all our outlets.
You will build your kitchen brigade for the scheduled 2025 relaunch of the hotel and beyond.
You will play a key role in driving the hotel's revenue growth and market share with effective management of the food production department.
You can make your mark on the Australian dining scene by helping us create our premier destination restaurant due to open mid-2026.
Responsibilities: Some key responsibilities include: Developing menus and recipes for all outlets in the hotel Recruitment, development, and management of the kitchen brigade Achieving monthly targets and key performance indicators Oversee purchasing, cost, and wastage of the Food Production department Work collaboratively with the F&B manager, Conference sales, and service teams Manage all related costs of the Food Production department Establish and maintain relationships with suppliers and vendors Ensure all kitchens exceed Health & Safety standards Qualifications: Some key qualifications include: Bachelor's degree in Culinary Arts, Hospitality, or related field Previous experience in a similar role is highly preferred Experience managing multiple outlets is highly desired Exceptional leadership and team management skills Hotel pre-opening experience is highly preferred Food safety supervisor certificate Excellent interpersonal skills to build effective relationships with all stakeholders Ability to work independently and as part of a team, with a proactive and problem-solving mindset Benefits we offer: Onsite parking Discounts across our hotel network Collaborative working environment in a small team As an independently owned and operated hotel, we have the freedom to innovate and implement new ideas quickly and easily If this role sounds like your next career step, please apply with your cover letter and CV.
